In France, there are seven breeds of donkey, including the Bourbonnais donkey, which originates from the northern Massif Central. It was widely used for transporting milk from dairy cows, for agricultural work, and for pulling carts. In winter, it kept charcoal burners company during their deliveries. By the 20th century, it was already being used for tourism: in Vichy, tourists visiting the spa town would ride in a cart pulled by Bourbonnais donkeys. The animal's back bears a distinctive crest known as a Saint Andrew's cross. The Bourbonnais donkey is renowned for its gentle nature, calm temperament, and hardiness. It lives an average of 40 years. The breed was officially recognized by the Ministry of Agriculture in 2002.

Crossing the hills of central Italy it is easy to come across donkey farms. These are no longer used for agricultural work, but to brighten up the places with their docile and intelligent character (they are often used as psychological 'therapy' by experts in the sector).
