San Luis Potosi Highlands, Mexico, March 26  -- Some Mexican farmers pick up Cabuches under a very hot sun in the San Luis Potosi desert in central Mexico. Cabuches are the buds of a cactus known as Red Biznaga found in the highlands of the San Luis Potosí region. In the months of March and April, when the desert is dressed in colors, the farmers make their two or three day trips to collect this natural product, used to make delicious dishes of the Mexican gastronomic tradition.

Sabino Canyon is a desert canyon in the mountains of Southern Arizona and a popular hiking destination.  Sabino Creek flows down the canyon.  Sabino Canyon began with the formation of the Santa Catalina Mountains over 12 million years ago.  The present-day varieties of plant life began appearing between 6,000 and 8,000 years ago.  The earliest human occupants of the area were the Native American Hohokam people.  In 1905, Sabino Canyon was placed under the control of the United States Forest Service. The Ajo Mountain Drive offers breathtaking views of the unique Sonoran Desert landscape, featuring a variety of flora and fauna. Two of the standout features of the area are the Organ Pipe Cactus (Stenocereus thurberi) and the Saguaro Cactus (Carnegiea gigantea). The Saguaro stands tall, often reaching heights of 40 feet or more and living up to two centuries. Its characteristic silhouette, adorned with 'arms' reaching towards the sky, serves as a testament to its endurance in harsh desert conditions.  In contrast, the Organ Pipe Cactus thrives in clusters, its slender stems resembling a congregation of organ pipes, hence its name. This cactus species flourishes in rocky terrain, its multiple stems serving as water reservoirs to survive extended periods of drought.  These two are endemic to the Sonoran Desert and found nowhere else in the world.
