San Luis Potosi Highlands, Mexico, March 26  -- A farmer pick up Cabuches under a very hot sun in the San Luis Potosi desert in central Mexico. Cabuches are the buds of a cactus known as Red Biznaga found in the highlands of the San Luis Potosí region. In the months of March and April, when the desert is dressed in colors, the farmers make their two or three day trips to collect this natural product, used to make delicious dishes of the Mexican gastronomic tradition.
