For about the past five years, every Father's Day Eve I try and make some smooth, creamy whisky fudge. I have always failed. It always comes out either too grainy, too brittle, or both. Usually tasty, but much more a Scottish Tablet than a fudge. This year I nailed it! I think the secret was to bin the sugar thermometer. Temperature is apparently critical to this process, but I judged instead by the feel of the spoon and I ended up with something great. :) It's Father's Day today (in the UK at least - it varies around the world) and this was my gift to my old man.
